Asparagus & Pear Salad Recipe

Ingredients

  • 1 pound fresh asparagus, trimmed
  • 1 large pear, sliced
  • 2 teaspoons lemon juice
  • 2 green onions, thinly sliced
  • 1/4 cup chopped walnuts, toasted
  • 2 tablespoons prepared honey Dijon salad dressing
  • 8 romaine lettuce leaves

Directions

  • In a large skillet, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3-5 minutes or until crisp-tender. Drain and immediately place asparagus in ice water. Drain and pat dry; cut into 1/2-in. pieces and set aside.
  • In a large bowl, combine pear and lemon juice. Add the onions, walnuts and reserved asparagus; drizzle with dressing and toss to coat. Arrange lettuce on four salad plates; top with asparagus mixture. Serve immediately. Yield: 4 servings.

Nutritional Facts 1 cup with 2 lettuce leaves equals 128 calories, 7 g fat (1 g saturated fat), 0 cholesterol, 60 mg sodium, 15 g carbohydrate, 3 g fiber, 4 g protein. Diabetic Exchanges: 1 vegetable, 1 fat, 1/2 fruit.

Keeping Lettuce Fresh

To store lettuce to keep it crisp and fresh, wash lettuce in cold water and drain very well. Use a “salad spinner” or pat it dry with paper towels. Store in a resealable plastic bag or airtight container with a dry paper towel in the bottom to absorb any leftover moisture. (Be certain to replace the towel if it gets wet.) For extra-crispy salads, you may want to use a lettuce variety like romaine that’s naturally more crisp.

LOVE IT! Eating it as I type. I went ahead and just cut the asparagus before I cooked it and microwaved it for about 2 1/2 minutes then rinsed in cold water. This could be a meal in itself! Love it!

Just made this with some minor variation: since I had a lot of lime juice, I used it instead of lemon juice and I added firm tofu for more protein. Once the tofu absorbed the other flavors, the dish was fantastic! I'm happy to say my hubby hates asparagus, so YAY, more for me!
