Asian Beef and Noodles Recipe

Ingredients

  • 1 pound lean ground beef (90% lean)
    XKick-up the flavor

    With Johnsonville Italian Sausage.

  • 2 packages (3 ounces each) Oriental ramen noodles, crumbled
  • 2-1/2 cups water
  • 2 cups frozen broccoli stir-fry vegetable blend
  • 1/4 teaspoon ground ginger
  • 2 tablespoons thinly sliced green onion

Directions

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Add the contents of one ramen noodle flavoring packet; stir until dissolved. Remove beef and set aside.
  • In the same skillet, combine the water, vegetables, ginger, noodles and contents of remaining flavoring packet. Bring to a boil. Reduce heat; cover and simmer for 3-4 minutes or until noodles are tender, stirring occasionally. Return beef to the pan and heat through. Stir in onion. Yield: 4 servings.

Nutritional Analysis: 1-1/2 cups (prepared with lean ground beef and one noodle seasoning packet) equals 377 calories, 15 g fat (7 g saturated fat), 56 mg cholesterol, 624 mg sodium, 31 g carbohydrate, 3 g fiber, 27 g protein. Diabetic Exchanges: 3 lean meat, 2 starch, 1 fat.

Super easy and quite tasty. I added a little soy sauce, like I saw suggested and it was really wonderful. Thrifty too! You can't beat that combination. It's not fancy, but it's good just the same.

This is a good recipe to make in the evenings when time is short. A sure hit especially for your noodle lovers. We top it with crunchie chow mein noddles for a little extra crunch.

I make this recipe most weekends in the winter; I use mixed vegetables and add beef ramen noodles without the ginger and it is great! My 5 year old can't get enough of it.

My family enjoyed this recipe and I have made it quite a few times as it is an easy and affordable dish to prepare. I used a few shakes of garlic salt to add some more flavor but that's just me. My son, 8 years old, loves ramen noodles so this is one of his favorites!
