Apple & Herb Roasted Turkey Recipe
  • Prep: 20 min. Bake: 3 hours + standing

Ingredients

  • 1/4 cup minced fresh sage
  • 1/4 cup minced fresh rosemary
  • 1 turkey (14 pounds)
  • 1 medium apple, quartered
  • 1 medium onion, halved
  • 1 celery rib, halved
  • 1/2 cup butter, melted
  • 1/2 cup apple jelly, warmed

Directions

  • Combine sage and rosemary. With fingers, carefully loosen skin from the turkey breast; rub herbs under the skin. Secure skin to underside of breast with toothpicks.
  • Place breast side up on a rack in a roasting pan. Stuff turkey with apple, onion and celery. Brush with butter.
  • Bake, uncovered, at 325° for 3 to 3-1/2 hours or until a meat thermometer reads 180°, basting occasionally with pan drippings. (Cover loosely with foil if turkey browns too quickly.) Brush with apple jelly. Cover and let stand for 15 minutes before removing toothpicks and carving. Yield: 14 servings.

Nutritional Facts 8 ounces cooked turkey equals 626 calories, 31 g fat (11 g saturated fat), 262 mg cholesterol, 222 mg sodium, 10 g carbohydrate, trace fiber, 72 g protein.

Made this for Christmas Eve dinner. It was wonderful. The herbs under the skin flavored the breast meat which I usually find bland and dry. I also tucked in a few small chunks of butter with the minced herbs to keep the breast meat moist. The gravy I made from the drippings was very flavorful. I used turkey stock that I had made from the neck, tail and giblets, as well as an onion cut into quarters and a couple of stalks of coarsely chopped celery. I also added about a fourth cup of white wine to the gravy. Delicious! This will be our new family recipe for turkey, especially since my husband doesn't like stuffing cooked inside the bird. Thank you for sharing.

Looks like I am hosting Christmas at my house. We did not have turkey for Thanksgiving so I though I might try to make one of Christmas. This is the BEST turkey I have ever prepared, it was beautiful, tasty and incredibly moist. I followed the directions exactly and I will be doing it again for Christmas. Oh so moist!

I used this recipe when I cooked a turkey for the first time a couple of years ago (I never cooked a turkey before because I always had the fear of cooking a dry turkey) and I will never make it any other way...for now! It was so moist and tender and the herbs just set off the flavor. It was to die for!

This recipe is simple, easy to prepare and produces a delicious meal that my friends raved about. I cooked it in the Webber kettle with hickory chips to add a beautiful smoke flavour and brushed it with redcurrent jelly as I couldn't get apple here in Australia. If anything I suspect these changes improved the flavour!

This turkey was absolutely fabulous and juicy!!!!! My fiances family raved about it! I had a friend at work who was sick yesterday so I brought her a plate to work today. She said it was the juiciest turkey she ever had! I had to substitute the rosemary for thyme bc I'm alergic to rosemary. Absolutely fabulous!
