Cook Smart

As demonstrated in the April/May issue, you can easily make your own flavored butters like those served in many restaurants. Here are three easy recipes to try.

Basil Butter
I make this tasty butter during the growing season and freeze it for later use. This allows my family and me to enjoy the flavor of fresh basil all year long. I use it to enhance cooked vegetables, chicken and fish. No one seems to miss the salt that I deliberately leave out. —Emily Chaney, Penobscot, Maine

Cinnamon Espresso Butter
I’ve used this tasty butter on everything from bagels to biscotti! I like to use a teaspoon of espresso powder for the instant coffee granules. —Diane Hixon, Niceville, Florida

Cajun Butter
Created by the Taste of Home Test Kitchen, this spread is sure to add some kick to grilled corn and other veggies.
