Party of Two

Here’s another delicious downsized dinner that won’t heat up the kitchen.

"Now that I’m retired, I have lots of time to plan, experiment and prepare meals," says Fran Roff of Rochester,  New York. "But these Citrus-Ginger Tuna Steaks, with a well-seasoned marinade, take only a few minutes to prepare."

"I couldn’t find a single Caesar salad recipe I liked, so I combined ingredients from a few recipes and came up with Fruited Caesar Salad," shares Kathy Keleher of Oak Creek, Wisconsin. "The addition of fruit gives this salad such a wonderful flavor. You could use a mango or mixed dried fruit instead of an apple or a pear."

Creamy and elegant Raspberry Cream Dessert from Marie Guthmiller of Mobridge, South Dakota turns any meal for two into something special. It’s rich and light, with a sweet raspberry sauce and a sprinkling of berries.
