The sharp, mustardy flavor of horseradish makes it a natural choice for perking up plenty of savory dishes. Prepared horseradish is made by grating the root of the plant and mixing it with vinegar or mayonnaise.

Horseradish is a perennial plant that's often grown as an annual for the best-quality root. It's easiest to start horseradish from a root cutting planted in rich soil.

Beware that this potent herb spreads and can easily take over an area. It's also difficult to get rid of since any tiny bit of root can sprout a new plant.
