Salt (sodium chloride) is essential for a variety of body functions, but we tend to eat too much through consumption of salty processed foods, fast foods and ready-prepared foods, and by adding salt in cooking and at the table. The end result can be rising blood pressure as we get older, which puts us at higher risk of heart disease and stroke. Eating more vegetables and fruit increases potassium intake, which can help to counteract the damaging effects of salt.
