Makeover Hot Chicken Salad Recipe

Makeover Hot Chicken Salad

Comforting casseroles get high praise in Eleanor H.’s kitchen. “Hot Chicken Salad is one of my family’s favorites,” she writes from Kirkland, Illinois. “I have a group of friends who particularly enjoy it, and it’s always a hit at potlucks.

“I could use some help, however, when it comes to decreasing its fat,” says Eleanor. “I’ve played around with the recipe but haven’t had much luck. I hope Healthy Cooking can help.”

With all of the cheese, mayonnaise and sour cream in Eleanor's chicken salad recipe, it’s evident why family and friends clear their plates and run back for seconds. Eleanor is right to be concerned about the fat, though. Just one serving contains 42 grams.

Our makeover team took out many of the heavy ingredients and replaced them with smaller amounts of their less-fat counterparts. Because light items don’t always produce a particularly creamy texture, the ingredients were combined with a thickened milk mixture and some plain yogurt.

In addition, the almonds were decreased and toasted for maximum flavor, and reduced-fat butter and cheese brought the numbers down even further.

Makeover Hot Chicken Salad is a mouth-watering success. It boasts 64% fewer fat grams than the original, and 253 fewer calories per serving. Best of all, it has all the satisfying comfort of Eleanor’s most-requested dish.
