A beautiful braided bread can really dress up an event. And Chicken ’n’ Broccoli Braid is no exception. It’s rich, satisfying, full of chicken and veggies and surrounded with a crispy, flaky crust. There’s only one problem. It’s also full of fat and calories, which is a big concern for Dana Rabe of West Richland, Washington.
“I love to make this simple and tasty dish for my family, but it just doesn’t fit into our lifestyle anymore,” Dana explains. “It’s one of our favorite meals. Can it be lightened without losing the fabulous flavor?”
Our makeover pros were up for the challenge. Taking a long, hard look at the original, they decided there were three main ingredients to focus on: cheese, crescent roll dough and mayonnaise. The first two were easy to fix simply by using reduced-fat varieties of those products. However, the reduced-fat mayo they used is a bit higher in fat and calories than they’d like to see. To keep the flavor and creamy texture, they replaced some of it with reduced-fat plain yogurt.
Our tasting panel found Makeover Chicken ’n’ Broccoli Braid a delightful improvement. It has all of the original’s taste and creamy comfort without the guilt. By taking out a quarter of the calories and nearly half the fat, the resulting makeover is both nutritious and delicious.
Remove the fat but keep the flavor in a recipe by replacing one-third to one-half of the mayonnaise with reduced-fat plain yogurt.
