Zucchini Apple Bread
A fraction of the fat! All the comfort…
“Help!”cries Kathy S. from Dunkirk, New York. “I love to bake Zucchini Apple Bread, but since I’ve been diagnosed as diabetic, I think my recipe calls for too much sugar.”
Our makeover team couldn’t wait to try Kathy’s harvest-time recipe. And just as she described, the moist loaves offered wonderful flavor but were quite high in calories, sugar and fat.
The original recipe was abundant in nuts, so the quantity was decreased to save some calories. Next, our home economists replaced a bit of the oil with applesauce and eliminated a few of the eggs.
Flavored with cinnamon and nutmeg, the makeover bread delivers plenty of down-home goodness. The recipe still yields three nut-filled loaves but contains nearly 60% less fat than the original recipe.
Best of all, the sugar was decreased by 28%, and that’s sweet news to Kathy. “The Makeover Zucchini Apple Bread received rave reviews,” she says. “No one believed it was a light version.”
