Sweet, quick breads are a favorite of most bakers, but Joanne J. of Salisbury, Maryland had a special request regarding her Poppy Seed Bread.
“I’d be interested in learning the nutritional values for my recipe,” she shares. “A lot of my co-workers and I are on Weight Watchers and would like to calculate how many points it has. Better yet,” she adds, “could you do a makeover on the recipe?”
Loaded with butter, brown sugar and eggs, the loaf posed several challenges for our experts. Wanting to decrease its cholesterol, calories and fat, they started by swapping out some of the whole eggs for egg whites and substituting half of the butter with applesauce.
The result? Makeover Poppy Seed Bread is just as tender as Joanne’s version but only contains half of the cholesterol and saturated fat. With 113 fewer calories and 10 grams less sugar per slice, it’s a guilt-free treat she and her work friends can enjoy.
