Creamy Artichoke Dip
Holiday traditions come in all shapes and sizes. For Managing Editor Mary Spencer and her family, an annual party two days before Christmas is the perfect chance to start the festivities off right.
“My sister, Teresa, hosts a Christmas Eve, Eve party every year,” Mary notes. “We always look forward to her decadent artichoke dip. She received the recipe from a friend, and it’s loaded with cheese, artichokes and just the right amount of jalapenos for a crowd-pleasing flavor.”
Unfortunately, all of the creamy goodness and cheese also makes Mary’s favorite appetizer high in calories and fat. Our home economists wanted to maintain the dip’s buttery texture as they set out to slim it down.
They began by replacing some ingredients with their low-fat counterparts and cut back on others to trim fat. To make up for the volume lost when they decreased the mayonnaise, they increased the amount of plain yogurt originally called for. They also scaled back the mozzarella cheese, adding reduced-fat ricotta to give the hors d’oeuvre a rich texture.
