A bevy of vegetables keeps things lean, but it’s the herbed marinade that truly pumps up the flavor in this zesty, casual supper.


  • Fat-free refried beans
  • Cumin Rice with Avocado


  • Janie sometimes adds zucchini and yellow squash to the fajitas.
  • If the weather cooperates, try grilling the sausage and veggies outdoors in a disposable aluminum pan.
  • Use a colorful combination of sweet peppers such as red, yellow, green or even orange or purple. You’ll need about four medium peppers.
