Why aren't diabetic exchanges listed for all recipes?
DEAR PEGGY: I am curious to know why some recipes give diabetic exchanges while others do not. —M.R., Portsmouth, New Hampshire
We require all of our recipes to be lower in calories, fat, saturated fat and sodium than their traditional counterparts. Recipes that have diabetic exchanges are held to an even stricter standard in those areas. In addition, we consider the amount of carbohydrates per serving before adding diabetic exchanges. Diabetics not only have to be judicious about the amount of carbohydrates in the foods they eat, but they're also at a higher risk for heart disease, which means limiting fat, saturated fat and sodium is even more important.
