DEAR PEGGY: What can I substitute for buttermilk? —V.S., Colville, Washington
A simple substitute for 1 cup buttermilk is 1 tablespoon lemon juice or white vinegar plus enough milk to measure 1 cup. Stir and let stand for 5 minutes before using. Or use 1 cup plain yogurt.
