Side dishes to complete your healthy meal
On page 55, we paired Chicken with Artichokes with Marinated Plum Tomatoes. These tomatoes feature balsamic vinegar, cilantro and lime juice and wonderfully fresh flavors. They'll be a nice accompaniment to just about any summer supper.
Nothing says summer picnics like homemade potato salad, and if it's healthy, that's even better! Give Healthy Potato Salad a try. We served it up with Zeus Burgers to round out our weeknight meal on page 57.
Page 59 featured Chipotle Mustard Pork Tenderloin paired with Southwestern Rice for a menu that has lots of southwest flavor. The rice is particularly good with any Mexican dish, and it's much lower in sodium than packaged rice mixes. Try it tonight with enchiladas, tacos, burritos or even Chipotle Mustard Pork Tenderloin!
