The microwave oven does a beautiful and quick job of cooking winter squash. For acorn squash (about 1 pound), cut squash in half and remove seeds; place cut side down in a microwave-safe dish. Add 1 to 2 tablespoons of water; cover and microwave on high for 6-9 minutes or until tender, turning once. Let stand for 5 minutes. Larger squash, such as butternut, buttercup and hubbard (about 1-1/2 pounds), will take a bit longer in the microwave. Follow the previous directions, but cook 9-12 minutes on high or until squash is tender.
