Fresh corn is at its peak May through September. Look for ears of corn with bright green tightly closed husks and golden brown silk. The kernels should be plump, milky and in closely spaced rows all the way to the tip.

As soon as corn is picked, the sugar gradually begins to convert to starch, reducing its natural sweetness. So corn is best cooked and served the same day it's picked and purchased.
