Get to Know Ginger
Ginger Pound Cake uses fresh gingerroot and crystallized ginger, both of which can be found in your grocery store's produce department.
Look for fresh gingerroot that has smooth, wrinkle-free skin and a spicy fragrance. Fresh, unpeeled gingerroot should be wrapped in a paper towl, placed in a plastic bag and refrigerated for up to 3 weeks. It can also be tightly wrapped and frozen for up to 2 months.
Crystallized ginger, also known as candied ginger, has been cooked with granulated sugar. Store it in an airtight container in a cool, dark place for up to 3 months.
