Taco Roll-Ups

My daughter loves the taco roll-up frozen dinners for kids. I decided I could make those roll-ups myself for a lot less (especially since she wasn't touching the rest of the dinner). I brown a batch of ground beef and add taco seasoning. I then put a small amount of meat on warm corn tortillas and roll them up tight. After securing them with toothpicks, I freeze them on a cookie sheet before storing in the freezer in a freezer bag. Individual roll-ups can be microwaved for 30 seconds to reheat. My picky 3-year-old gobbles them up! —Stefanie Healey, Alpine, Utah
