Super Quick Pilaf
It's easy to add a bit of interest to plain rice. For each cup of uncooked jasmine, long grain white rice, brown rice or 1-1/2 cups instant rice, saute 1/2 cup each sliced celery and thinly sliced green onions in 1 tablespoon butter. Stir into cooked rice along with 1 to 1-1/2 teaspoons grated lemon peel. Season to taste with salt and pepper.
