Potluck Timesaver

As a time-saver when our children were small, I would cook an extra dinner portion each night and freeze it in an ovenproof dish. When we had six dinners accumulated, we’d have "potluck" on a busy night. Each person selected a covered dish, not knowing what was inside. Then I'd reheat the meals.
