Foil Pie Ring

Most pie recipes instruct you to cover the edges of the crust with aluminum foil when they begin to brown. I save myself a lot of trouble by fitting a foil ring around the pie while it’s still cold…before I begin baking it. Once my foil ring is formed, I remove it from the pie and put the pie in the oven. When the pie’s edges begin to brown, I just set the foil ring in place and continue baking. —Faye Hogenson, Gresham, Oregon
