“When I make pasta, I replace the spaghetti sauce with mild salsa. I made cheese manicotti covered with salsa for a friend’s housewarming party and received compliments,” writes Margharita Fransis of Utica, Michigan.
I enjoy making this dish for family and friends. It's easy to prepare, and I like to get creative with the sauce. For example, sometimes I might add my home-canned tomatoes, mushrooms or vegetables.
"Our three kids just love the fun wagon wheel shapes in this quick-and-easy recipe," relates Janine Freeman from Blaine, Washington. "The mildly seasoned sauce is something that even the pickiest eaters enjoy." TIP: For variety, try it with Italian sausage instead of ground beef, Janine recommends.
This hearty casserole looks and tastes a lot like lasagna, but it's quicker to prepare since you don't have to layer it. It disappears fast when I share it at a gathering. Served with rolls and a salad, it makes an easy and satisfying supper.
