“To make the best scalloped potatoes, I always sprinkle canned chopped green chilies between the layers of potatoes, cheese and sauce,” informs Kathleen M. of Lemoore, California. “What a wonderful taste!”
It's a family tradition to have this potato casserole at Christmas, Easter, birthday parties...any time our family gets together. Mom always makes it, and we all look forward to it. A family gathering without it would not be complete.
I wanted a different side dish one night, so I dressed up my usual scalloped potatoes with bacon, green onion and extra cheese. Microwaving speeds things up, but you can save even more time by preparing it a day early.
“When we lived closer together, our family liked to get together for dinner,” recalls Barbara Heile of Fortuna, California. “Every Sunday we took turns with desserts, salads and main dishes. This is one of our favorites. Since it cooks in one pan, cleanup is a breeze.”
