I don’t enjoy peeling large quantities of onions because the outer peel tends to fly everywhere. So I put the unpeeled onions in the sink or a large pot and pour boiling water over them to cover. I let them sit for 3 to 4 minutes, then run under cold water. The outer peels are moist and slip right off. —Claudia Wendel, Fresno, California
