Single-Serving Supper

Here’s a quick way to use up extra baked potatoes and empty the fridge at the same time. For each serving, warm a baked potato in the microwave, cut it in half and arrange both halves on a plate. Then top them with any of the following leftovers to suit your tastes: chopped ham or another meat, cooked crumbled bacon, chopped onion, leftover vegetables, seasonings, salsa or another sauce and shredded cheese. Zap the potato in the microwave again until the toppings are heated through and the cheese is melted. Each potato makes a hearty supper for one person.
