Single Serving Leftovers

I came up with a handy solution for storing leftovers. I line each cup in a muffin tin with plastic wrap, place leftovers in each cup and freeze the whole pan. The next day, I remove the plastic-wrapped servings and package them for the freezer. When I want to make a speedy lunch or dinner, I take out the exact number of portions I need and microwave them. —Gayle B., Minot, North Dakota
