Quick Toast Cups

When I want to use the remainder of a loaf of bread before it gets stale, I make toast cups. I melt butter and brush it inside miniature muffin cups. I use a biscuit cutter to cut bread slices into round shapes. I press the bread rounds into the cups, then brush the insides with more melted butter. I bake them at 375° for about 15 minutes or until lightly browned. These toast cups are excellent for serving any creamed dish or meat mixture with sauce. —Karen Combs, Union Bridge, Maryland
