Clean-the-Fridge Salads

When my husband and I want to use up extra ingredients or leftovers from different dinners, we toss them into a salad for a quick and satisfying meal. Keeping a head of lettuce on hand ensures we can create a salad whenever it’s time to clean the fridge! It’s easy to make a chef's salad when you start with leftover deli meat, grilled chicken or steak. Shred a small chunk of cheddar or mozzarella, toss in whatever veggies you have on hand, hard-cook the last few eggs left in the carton, and sprinkle wheat germ or crunchy nuts over the top. Or dress up lettuce to make a “theme” salad, such as Italian (extra pepperoni slices, tomatoes, olives, seasoned croutons, etc.) or Southwest (leftover taco meat, refried beans, tomato, sour cream, shredded cheese, etc.) —Kim Lucas, Goshen, Indiana
