“I saute onion, green pepper and garlic in a little butter and stir into leftover mashed potatoes. Then I sprinkle shredded cheddar cheese on top and bake in the oven until it’s heated through,” explains Joyce Tate of Plantation, Florida. “For a little zip, you could use jalapeno cheese.
