Trimming Fat from Chopped Nuts
I trim fat and add flavor to recipes and sauces that call for chopped nuts by adding extra spice grinders with whole roasted peanuts, almonds and sesame seeds. When I want to add one of those to something, I just grind the amount I want.
Because freshly ground nuts are more flavorful than those that are pre-chopped, you don’t need as much. This lowers the fat in the dish. I store the nuts in the freezer to prevent spoiling, and they’re easier to ground, too. I love to grind peanuts or almonds on top of ice cream for a treat.
