Thickening Salad Dressing

Here is a way to make salad dressing thick without adding fat. Xanthan gum, a white powder available at health food stores, has great thickening powers. You’ll see this ingredient on the label of many food products because it is a natural thickener. For a typical dressing recipe, I use only 1/8 teaspoon or less.
