Soup for One

I use a small can of mixed vegetables and a small can of vegetable juice to make a tasty soup for one person. I combine the veggies and juice in a microwave-safe bowl, and microwave it until it’s heated through. Served with a glass of milk and a few crackers, this makes a nice light meal or midnight snack for one. Debra L., St. Joseph, Michigan
