Peach Zucchini Bread

While making zucchini bread, I ran out of the fat replacement I usually use in my recipe. Since I had fresh peaches on hand, I peeled several, blended them with my food processor and added a pinch of ginger. I used an equal amount of the peach mixture to make the bread, which turned out moist and delicious. I froze the leftover peach mixture in ice cube trays. I used the cubes whenever I needed a quick fat replacement in recipes for baked goods. Rosella S., Muncie, Indiana
