Light Fried Tortillas

Being on a low-fat, low-sodium diet has its challenges. I like to substitute fresh parsley for salt called for in most recipes. To keep the parsley fresh, I cut 1/2 inch off the bottom of a bunch from the grocery store and put it in a glass of water like a bouquet. I cover with a plastic bag from the produce department and keep it in the fridge. It lasts for several days. This works with fresh cilantro, too. JoEllyn M., Reedsburg, Wisconsin
