Fried Fish with Italian Dressing

I recently experimented with a lighter and zestier version of fried fish. I lightly brushed tilapia fillets with fat-free Italian salad dressing, and then coated them with bread crumbs. I pan-fried the fillets in a small amount of olive oil and I Can’t Believe It’s Not Butter spray. This eliminated the need for eggs, plus gave the fish zippy flavor without requiring additional seasonings. Marti B., Valley View, Ohio
