Diabetic Dessert

My husband and I both have diabetes, so I’m always trying to find delicious desserts that don’t have a lot of sugar and fat. For a sweet treat, I simply spoon a can of light apricot halves (including the syrup) into four parfait glasses. Then I top them with sugar-free instant vanilla pudding prepared with fat-free milk. I chill them until set, and top with a maraschino cherry for a pretty look. Evelyn K., Elizabeth City, North Carolina
