Shaping Cabbage Rolls

Place head of cabbage in boiling water just until outer leaves begin to loosen. Remove cabbage from water and remove leaves that come off easily. Place cabbage back in water if more leaves are needed. For easier rolling, cut out thick vein from each leaf, making a V-shaped cut.

Place 2-3 tablespoons of ground beef mixture on each cabbage leaf; fold up sides, beginning from cut end. Roll up to completely enclose meat mixture in leaf. Fasten with a toothpick if necessary.
