Season chicken with salt and pepper, then cook in 2 Tbsp. oil. Remove from the pan at 170º and keep warm.

Add mushrooms and saute until tender, then stir in garlic. Carefully pour in wine and scrape the skillet to stir up the browned bits.

Bring on the cream and keep stirring; the sauce will thicken as it cooks. Add the chicken back to your creation and sprinkle cheese on top, cooking until the cheese melts. Before dishing up, sprinkle with parsley and more cheese.
