Piping Meringue into a Disk
Make meringue according to recipe directions. Cut a small hole in the corner of a pastry or resealable plastic bag. Insert a 1/2-in. round decorating tip (#A1).
Fill bag about half full with meringue. Smooth filling sown towards the decorating tip to eliminate air bubbles, which will cause breaks in the design when piping. Twist top of bag shut.
Line a baking sheet with parchment or waxed paper and draw 8-in. circles on paper. Hold the pastry bag up and position the tip about 1/8 to 1/4 in. above the baking sheet. Starting at the middle of a circle, pipe meringue in a spiral until the circle is completely filled. Stop squeezing before you lift the tip from the baking sheet.
