How-to Fill Angel Food Cake

Insert toothpicks an inch from the top of the cake on all sides as a guide for your knife.

Slice the top off the cake with a serrated knife.

Cut the outline of the tunnel with a small paring knife, leaving a 1-in. shell on each side. Use your fingers to pull out the cake. (Better go ahead and sample it, too.)

Fill the hollow with chocolate, sherbert or lemon filling.

Replace the top and glaze away.
