How to Create Cookie-Cutter Pie Crust Trim

Use for a single-crust pie. Make dough for a double-crust pie. Trim pastry evenly with edge of pie plate. Roll out the remaining pastry to 1/8-in. thickness. Cut out with 1-in. to 11/2-in. cookie cutters. With a sharp knife, score cutouts for added detail if desired. Brush bottom of each cutout with water. Place one or two layers of cutouts around the edge of crust; press lightly to secure. Cover with foil to prevent overbrowning.
