How-to Crack & Clean Cooked Whole Lobster
Twist off claws. Pull off small pincer and discard. Use a nutcracker, lobster cracker or crab mallet to crack the large claws.
Twist off the legs at the body, crack the shells and push out the meat.
Twist the tail and body in opposite directions to separate them.
Turn tail, belly side up. Using scissors, cut through the membrane on both sides of the shell. Lift off and discard membrane. Lift out the tail meat. Discard the intestinal vein. Any roe or tomalley (greenish liver) may be eaten.
