Cracking and Cleaning Cooked Whole Lobster

Twist off claws. Pull off small pincer and discard. Use a nutcracker, lobster cracker or crab mallet to crack the large claws. Remove meat.

Twist off the legs at body and crack shells and push out meat.

Twist tail and body in opposite directions to separate.

Turn tail, belly side up. Using scissors, cut through the membrane on both sides of shell. Lift off and discard membrane. Lift out tail meat. Discard intestinal vein. Any roe or tomalley (greenish liver) may be eaten.
