Spice Substitutions

Need a Sub? Want those fall flavors, but don't have the spice on hand? Try these 1-teaspoon-sized substitutions:
Allspice:
1/2 teaspoon ground cinnamon + 1/2 teaspoon ground cloves.
Apple Pie Spice:
1/2 teaspoon ground cinnamon + 1/4 teaspoon ground nutmeg + 1/8 teaspoon ground cardamom + 1/8 teaspoon ground allspice.
Mace:
1 teaspoon ground nutmeg.
Pumpkin Pie Spice:
1/2 teaspoon ground cinnamon + 1/4 teaspoon ground ginger + 1/8 teaspoon ground nutmeg + 1/8 teaspoon ground cloves or allspice.
