When I invite people to dinner, they often ask if we're going to have this dish for dinner. They think I slave all day in the kitchen, but I don’t tell them any different. I suppose my secret’s out now!
These golden Cornish hens, shown at right, are seasoned with basil, sage and thyme for plenty of flavor. They're simple to prepare yet make any occasion seem special. For a fast finish, serve corn bread stuffing and chunky cinnamon applesauce...or roasted cubed potatoes with pepper and carrots plus instant chocolate pudding for dessert.
THIS IS a perfect main dish when you're cooking for two. I've even used these hens as a stand-in for turkey on Thanksgiving Day when the group was not large.
I found this recipe among my mother's collection. She was always searching newspapers and magazines for new cooking ideas. —Geraldine Grisdale
