Tofu is made from soybeans and does not contain animal products, yet it is high in protein. This makes it popular in vegetarian recipes, but it’s nutritious and tasty in conventional recipes, too.
There are two types of tofu: fresh and silken. Fresh is packed in water and is located in the produce or dairy section. It is ideal for slicing and adding to stir-fries and soups. Silken tofu, named for its silky-smooth texture, is ideal for smoothies and other dishes where a creamy consistency is desired. Silken tofu, which does not have to be refrigerated, is located in the Asian or health foods section.
