Success with Sauces

While sauces are fairly simple to prepare, keep these tips in mind to ensure perfection every time.

Unless the recipe states otherwise, cook the sauce over low to medium heat only for the time specified. High heat and lengthy cooking can make a sauce curdle.

To prevent lump in a sauce thickened with flour or cornstarch, be sure to stir the mixture constantly while boiling. If lumps do form, break them up by beating briskly with a wire whisk.
