Quick Hearty Dinner

I have a trick I’ve used for years to put a meal on the table fast. When I’m browning ground beef for a recipe, I cook extra. When it’s cooked, I take out a few cups, cool it and put it in a heavy-duty plastic bag in the freezer. On a day when time gets away from me, I defrost the cooked ground beef in the microwave and combine it with other easy ingredients for a quick hearty dinner. I might add a can of vegetable soup and serve it over rice…a can of cream soup and serve it over biscuits…or a package of seasoned rice mix or macaroni and cheese for a meal in minutes. —Pam Hooley, Goshen, Indiana
